And now I want to talk about the homeland of Italian pizza. The first thing that distinguishes Italian pizza from pizza from other countries is that it is cooked in Italy. It is worth noting that Italians are very ambitious about recipes for pizzas of other countries, and simply call them ordinary pies. It is also worth noting that real pizza is probably not Italian, but Neapolitan.

The Neapolitan pizza recipe includes flour (plain or durum flour), yeast, water, olive oil and salt.

Today in Italy there are more than two thousand pizza recipes. But let’s talk about classic Italian pizza recipes. This is Margarita, Margarita-Extra, Marinara.

Margarita pizza includes Mozzarella cheese, tomatoes and basil. In turn, Margarita-Extra is prepared in the same way as the usual Margarita, but it includes mozzarella cheese from buffalo milk and another type of tomato is used. The composition of the marinara pizza includes garlic, olive oil and oregano.

Another option for Italian pizza is Calzone (calzone, “envelope with a filling”) – this is an Italian cake in the form of a crescent, which is prepared in a closed form. Also in Italy, this pizza is also called panzerotto and panzarotto. Calzone ingredients are oregano, parmesan, mozzarella, mushrooms, ham and ricotta.

In Italy, they don’t roll out the dough with a rolling pin, they only crush it with their hands, twist it and toss it. It is important that pizza is cooked only in a wood oven, at a temperature of 200 to 215 degrees. Italian pastry is very thin and should have a delicious fried crust. The standard size of Italian pizza does not exceed 35 centimeters in diameter.

One of the main ingredients of Italian pizza is cheese. Most often used Mozzarella Cheese.

Mozzarella cheese is a perishable product, therefore it is sold in a packaged form, in a package that is filled with whey. Real Italian Mozzarella has a slightly fresh taste. The cheese tastes delicate and is quite high in calories.
