Classic Italian pizza – what is it?

The journey of our crew to Italy is still waiting in the wings. And the crew does not depart from its iron rule and begins to collect information about this amazing country. Let the first article of the future Italian cycle be about the traditional dish of sunny Italy. What is it, classic Italian pizza?
The answer at first glance is simple – a yeast dough cake, tomatoes, cheese and olive oil are taken.
In fact, a pizza recipe has been formed over hundreds of years. Almost 6 thousand years have passed since the invention of the furnace and the principle of dough leaven. In 1570, the word mozzarella was first used in the book of recipes of the papal court as the name for cheese made from buffalo milk. And after the discovery of America, the conquistadors brought the first tomatoes to Europe. But it was not until the 17th century that special chefs called pizza makers began to cook and sell pizza.

The history of pizzeriasthe XIX century, pizzerias became a fashionable institution in Italy, and the pizzeria, opened in 1830 in Naples, in which pizza was baked in an oven made of volcanic stone, became a favorite place of Bohemia. In 1889, in honor of Queen Margarita of Savoy, pizza was prepared, which is still considered the most popular in the world, which is greatly facilitated by its “patriotic” filling: the tricolor in the colors of the Italian flag is red tomatoes, green basil leaves and white cheese.
Since then, a lot of water has flowed. From national dishes, pizza has become international. In any self-respecting tourist city has its own pizzeria, and not one. On the restaurant portal Еatme.ua you can easily and simply choose a pizzeria in Kiev or any other city in Ukraine according to your preferences: based on price, the possibility of relaxing with children or gatherings in a friendly company. The catalog of this portal has pizzerias where they prepare only authentic Italian pizza, as well as places where you can show a culinary taste and create your own masterpiece.

What is the secret of pizza from the best pizzeria?
Traditional Italian recipes are based on several secrets that we will help to reveal.
The best flour.
The dough recipes in each region of Italy are different, but the flour should be from durum wheat, and the yeast is the freshest. The dough does not roll out on a rolling pin, but a pizza maker kneads it with his hands in order to preserve the structure of the dough and transfer heat to his hands. Our grandmothers sang and talked with the dough when baking pies, the same thing here – almost magic.

Tomatoes or tomato sauce.
Of course, it is better to cook the sauce yourself from ripe tomatoes, adding spices to taste. By consistency, it resembles tomato juice and can be stored in the refrigerator for a long time without losing taste.
Mushroom, garlic or cream sauce, depending on the fillers, is also suitable for pizza.
Flavored cheese melted in the oven.
Cheese gives pizza a spicy flavor and creates a crust, while maintaining the juiciness of pizza. For classic pizza, mozzarella cheese made from buffalo milk or cow’s milk is used. The cheese has a soft structure and is easily melted, while the pizza filling does not burn.
The popularity of pizza was brought by the fact that in our time you create your own pizza, adding to the base the filling to your liking. There is no limit to fantasy, just as there is no limit to the popularity of this wonderful Italian dish.
